The main concern in producing quality food is the choice of the raw materials. Which is why there are companies in Parma that specialize in the selection and production of ingredients. There are two prime examples: flour, obtained by milling selected wheat of different varieties depending on whether it is intended for pasta or bakery products, and extra virgin olive oil, since in the hills on the right bank of the Parma stream, near Lesignano de’ Bagni, there is a micro-climate that allows the growing of olive trees.
