The many precious gifts lavished by the mountainous areas near Parma include mushrooms and truffles. The Porcino mushroom from Borgo Val di Taro even has Protected Geographical Indication (PGI) status and, whether fresh or dried, is a basic ingredient of all the classic local menus. Instead, the Fragno Black Truffle grows in the Parma and Baganza valleys on the Parma Apennines, at an altitude between 500 and 900 metres. It is hunted down from the end of September and throughout the winter.
